MAHALLIY VINOLARNING FLAVONOIDLAR VA SUVDA ERUVCHAN VITAMINLAR TARKIBI TAHLILI

Ushbu tadqiqotda mahalliy sharoitda yetishtirilgan uzum navlaridan tayyorlangan oq vino (Bayan shirey) va qizil vino (Hingdohni) namunalarining flavonoidlar hamda suvda eruvchan vitaminlar tarkibi yuqori samarali suyuqlik xromatografiyasi usuli yordamida tahlil qilindi. Oq va qizil vinolarda flavonoidlarning umumiy miqdori deyarli bir xil bo‘lishiga qaramay, ularning tarkibiy taqsimoti turlicha ekani kuzatildi: oq vinoda gipolaetin, qizil vinoda esa rutin yuqori miqdorda aniqlangan. Flavonoid glikozidlar qizil vinoda 82,5 %, oq vinoda esa 33,92 % ni tashkil etdi. Kuchli antioksidant bo‘lgan gall kislotasi oq vinoda ko‘proq qayd etildi. Suvda eruvchan vitaminlar tahlili natijasida ikkala vinoda B2, B3, B6, B9 va C vitaminlari aniqlanib, oq vinoda ularning umumiy miqdori biroz yuqori ekanligi ko‘rsatildi. adqiqot natijalari oq va qizil vinolarning biologik qiymatini, antioksidant faolligini hamda funktsional ichimlik sifatidagi ahamiyatini tasdiqlaydi.
